蛋包飯 [食譜] ~ Rice Omelette [Recipe]


蛋包飯(日文:オムライス Omu-raisu)是一種由蛋皮包裹炒飯而成的飯料理。
其日文名稱是由法文字omelette(蛋包)加上英文rice(飯)所組成的日製新字。
 
傳統的蛋包飯作法首先將打勻的蛋汁倒入平底鍋,煎成半熟的蛋皮時,再將飯倒入,並將飯給包起來。最後盛盤後,還會再淋上番茄醬。

做法:
Directions:
 
先做炒飯
Make Fried Rice

(右圖 RIGHT )

先炒香洋蔥, 加入 蔬菜 (如有), 煮至熟透.
Sautee onion, add vegetable cubes and/or meat product (if any), cook until soft.

將冷飯下鍋炒散,飯和其他材料
再加入番茄醬, , &胡椒調味
熄火備用
Add rice, continuously stir until rice is heated through and well mixed with other ingredients.
Season with ketchup, sugar, salt and pepper.
Remove from heat and set aside.

煮飯時加半茶匙薑黃粉和半茶匙辣椒粉
Add half teaspoon of turmeric powder and paprika when you cook the rice.

煎蛋
Fried Egg Sheet
 
將蛋打成蛋.
Beat egg thoroughly.
 
平底鍋(8-10)燒熱
Grease and heat an 8-10 inch skillet till hot.
 
倒入雞蛋,手持平底鑊輕搖,讓蛋液平均流滿全鑊
Pour in the eggs all at once & quickly swirl to coat the bottom evenly with the eggs.
 
不需反蛋便可取出
Remove from skillet when the eggs are set on the bottom and half-cooked on top.
 
蛋包飯
Make Omelette
 

 
碗裡舖保鮮再放蛋, 將炒飯放在蛋皮上,
跟保鮮一起捲起來造型後, 保鮮
Spread the fried rice over half the omelette and fold the other half over the rice.
 

 
淋上番茄醬/咖哩* 加點點綴, 就可上
 Eat with ketchup / curry* / any other sauces
 

*加熱咖哩的時候可加三湯匙牛奶
*I added 3 tablespoon of milk in the curry while reheating them.

茄汁炒飯本身已經很美味 >w<

不加蛋皮是有原因的… …
因為蛋太多了 ~
即使是一人份的蛋包飯, 我亦是只用一隻蛋
都市人一天一隻蛋很是足夠了 ~

蛋包飯是相當受歡迎的料理,不但是一道家庭料理,甚至還有專賣店,當中的款式 配搭更是層出不窮。
